Greek Steak Roll, Mixed Squash Sticks in Cream Sauce, Fried Spinach and Egg, and Sauteed Mushrooms in Red Wine.

Greek Steak Roll


Use one pound of flank steak, round steak or thinly cut top sirloin steak.

Tenderize meat thouroughly.

Place steak on cutting board after tenderized and add olive oil upon surface of steak.
Add four cloves of minced garlic in the middle of the steak. Add 1/8 cup chopped white onions and 1/8 cup roasted, chopped red pepper. Add 1/8 cup of finely chopped celery and 1/8 cup of chopped artichoke hearts. Top off with 1/4 cup of crumbled feta cheese.

Begin on one edge of steak and carefully roll steak into a tube keeping the filling inside; you may tie the steak together using twine.

In an iron skillet, warm olive oil to a sizzle and carefully add the roll of steak. Allow to sear for a few minutes on each side. Remove from skillet and add to baking sheet or pan. Cook for 30 minutes at 400 degrees F. Add Kitchen Bouquet Browning agent for attractive color midway through cooking.

Place cooked steak upon cutting board and slice at 3/4 inch thickness.

Mixed Squash Sticks in Cream Sauce.

Slice 1/4 cup each of zucchini and Texas crook-necked squash, crosswise.
Slice the squash into 1/4" strips.
Chop 1/8 cup chopped white onion.

In an iron skillet, sautee chopped white onion in 2 tablespoons sweet cream butter.
At 1/2 teaspoon garlic powder and salt and pepper.
Add squash mixture when sauteed onions become transparent.
Cook, stirring constantly and add 1/4 cup heavy cream.
Take skillet off of range and stir.
Add 1/cup shredded parmesan cheese.
Garnish with parsley flakes.
