totally awesome. my mom's recipe. please ignore the yucky boxed rice -- i was going to make some basmati but was way too hungry to wait another hour, so i made some broccoli "rice" stuff jack had brought home from texas. oops.
recipe! (best thing about it for me was that i only had to buy the chops, everything else was on hand. score!)
mom's oven bbq pork chops
slowly cook 1/3 c. chopped scallions in 3 tbsp butter (i did more of both) in saucepan til tender. add 1 c. ketchup, 1/3 c. vinegar or lemon juice (i did a combo because i only had half a lemon), 2 tbsp brown sugar, 1/2 c. water, 2 tsp. prepared mustard, 1 tbsp worcestershire sauce, salt + pepper, then cover and simmer 15 minutes.
roll 5 thin pork chops (i used 7 smaller ones, extra thin) in flour and brown in a frying pan. pour the sauce over the pork chops in a casserole dish. bake for 45 minutes (the longer, the more tender!) at 350 degrees.
it's great with regular rice, because if you make enough sauce you can put it over the rice as well. mmmmmmm.
Pork Chops with Green Chiles Marinade, Cooking
1 4 oz can green chiles
1/3 cup vinegar (I used white)
3/4 tsp ground cumin
3/4 tsp garlic powder
3/4 tsp salt
1/2 tsp dried oregano (I used mexican oregano)
1/2 tsp dried thyme
1.25 lbs boneless pork chops
Mix everything but the pork chops together. Pull the mixture over the pork chops and marinate at least 4 hours and up to overnight, in the refreigerator.
If the chops aren't fully covered by the marinade, make sure and turn them at least once.
These can then be grilled, broiled, or cooked in a pan over medium-high heat.
About 4-5 minutes per side for medium (depends on thickness of your chops).
Remove from where ever it is your cooking them, loosely cover with foil and let rest for 10 minutes.
I adopted this from a recipe meant for cooking 48 4 oz chops. It is tasty, but you might try 8 oz of chiles and a full teaspoon of ground cumin and garlic powder to make it even better.
